Creamy feta + roasted red pepper chicken and cauliflower for the bestttt one pot dinner!! Im obsessed with this one- especially with some fresh pita or sourdough for dipping! Would also be delish over rice, pasta, or potatoes 🤭 RECIPE (serves 4-6) 1 tbsp olive oil 1/2 of a yellow onion, diced 2 cloves garlic, minced 1/2 lb cauliflower florets 12 oz jar of roasted red peppers, drained and chopped 2 lbs chicken breasts or chicken tenders (boneless + skinless) 1 + 1/2 tsp paprika 1 tsp oregano 1 + 1/2 tsp sea salt 1/2 tsp black pepper Red pepper flakes, to taste 2.5 cups low sodium broth, more as needed 1 cup chopped baby spinach 3/4 cup crumbled feta 8 oz cream cheese Juice of 1 lemon 1. Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes. 2. Add cauliflower, red peppers, chicken, seasonings, and broth. Add more broth as needed until everything is fully covered. Bring to a simmer; cover with a lid and simmer for 10-15 minutes, or until chicken is cooked throughto 165F. 3. Remove chicken and shred with forks. 4. Return chicken to pot along with spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken a bit. What I ate for lunch and why As someone who was born and raised in Hawaii, spam was an essential component of many meals growing up. When I moved to the mainland, I was told to avoid spam due to its high sodium and saturated fat content. Though I understood the importance of limiting this for health reasons, this wasn’t realistic advice for someone whose favorites foods (e.g. spam musubi, fried rice) included spam. As always, I found the idea of “adding” instead of “subtracting” much more helpful (and culturally sensitive)! Instead of completely avoiding spam, I may add more nutrients to my meal to make it higher in fiber, nutrients, and protein. This is one of many examples of how AANHPI individuals have diverse cultural backgrounds, beliefs, and practices that significantly influence their health and healthcare decisions. By having AANHPI representation among healthcare professionals (including dietitians), we can better bridge the cultural gap and provide appropriate nutrition and diet advice that respects and aligns with the unique needs and preferences of these communities. This includes understanding dietary preferences and cultural nuances that may affect our eating habits and, therefore, our health! #AD 🏷 SAVE this easy PB&J chia pudding with milk ✨which has 15 essential nutrients in just one glass✨ for a nourishing breakfast or snack that will keep you energized all day long 🐮 INGREDIENTS 1 cup milk ¼ cup chia seeds ¼ tsp vanilla extract  Pinch of salt  1-2 tsp maple syrup ½ cup frozen mixed berries 1-2 tbsp peanut butter HOW TO MAKE 1. Combine chia seeds, milk, vanilla extract, salt, and maple syrup in a mason jar or other food container with a lid. Stir well, and let sit for 5-10 minutes on the counter. 2. Stir again to break up any clumps. Secure with a lid and store in the fridge for a minimum of 2 hours.  3. When you’re ready to serve, add your frozen mixed berries to a microwave-safe bowl. Heat in 30-second intervals until the berries are warm and have released their juices. If you don’t have a microwave, heat them on the stove over medium heat. 4. Transfer your chia pudding to a bowl. 🍓Strawberries & Cream Chia Seed Pudding🍓 Ingredients: - 2 tbsp chia seeds per serving - 1/2 cup strawberry mixture - Optional: 1 tsp sweetener of choice (if desired) -Yogurt (I used Siggis coconut yogurt) -coconut shreds Strawberry Mixture: - 2 cups milk of choice (I used regular cows milk) - 1 cup strawberries Instructions: 1. In a blender, combine milk and strawberries. Blend until smooth. 2. In each container, add 2 tbsp of chia seeds. 3. Pour the strawberry mixture over the chia seeds in each container. 4. Optionally, add 1 tsp of sweetener to each container, according to preference. 5. Stir well to combine all ingredients. 6. Refrigerate the containers overnight. 7.Top with Siggis coconut yogurt (or yogurt of choice) and coconut shreds. #AD 🏷 SAVE this easy PB&J chia pudding with milk ✨which has 15 essential nutrients in just one glass✨ for a nourishing breakfast or snack that will keep you energized all day long 🐮 INGREDIENTS 1 cup milk ¼ cup chia seeds ¼ tsp vanilla extract  Pinch of salt  1-2 tsp maple syrup ½ cup frozen mixed berries 1-2 tbsp peanut butter HOW TO MAKE 1. Combine chia seeds, milk, vanilla extract, salt, and maple syrup in a mason jar or other food container with a lid. Stir well, and let sit for 5-10 minutes on the counter. 2. Stir again to break up any clumps. Secure with a lid and store in the fridge for a minimum of 2 hours.  3. When you’re ready to serve, add your frozen mixed berries to a microwave-safe bowl. Heat in 30-second intervals until the berries are warm and have released their juices. If you don’t have a microwave, heat them on the stove over medium heat. 4. Transfer your chia pudding to a bowl. 🍓Strawberries & Cream Chia Seed Pudding🍓 Ingredients: - 2 tbsp chia seeds per serving - 1/2 cup strawberry mixture - Optional: 1 tsp sweetener of choice (if desired) -Yogurt (I used Siggis coconut yogurt) -coconut shreds Strawberry Mixture: - 2 cups milk of choice (I used regular cows milk) - 1 cup strawberries Instructions: 1. In a blender, combine milk and strawberries. Blend until smooth. 2. In each container, add 2 tbsp of chia seeds. 3. Pour the strawberry mixture over the chia seeds in each container. 4. Optionally, add 1 tsp of sweetener to each container, according to preference. 5. Stir well to combine all ingredients. 6. Refrigerate the containers overnight. 7.Top with Siggis coconut yogurt (or yogurt of choice) and coconut shreds.
