Ingredients (for 2 servings): -extra virgin olive oil -1/2 red onion, sliced -1 red bell pepper, sliced -kosher salt -freshly cracked black pepper -16 ounces steak of choice -1 ear corn, kernels removed -crushed red pepper flakes, to taste -2 cups cooked brown rice -1 can pinto beans, cooked -1 cup cherry tomatoes, halved -queso fresco, crumbled -fresh cilantro, finely chopped -2 WHOLLY®AVOCADO  smashed minis -juice of 1 lime Directions: -Heat some olive oil in a cast iron pan over medium-high. Add in the onion and bell pepper to sauté, and season with salt and pepper. Cook, stirring occasionally, for about 15 minutes, until veggies are deeply caramelized and softened. -Meanwhile, allow the steak to come to room temperature. Pat day and season generously with salt and pepper. Heat a little olive oil in a pan over medium-high, then add in the steak to sear. Cook for about 4 minutes per side, or until cooked to your liking. Set the steak aside, off the heat, to rest for at least 10 minutes. Once rested, cut into thin slices. -Heat a bit more olive oil in a small pan over medium-high, then add in the corn kernels. Season with salt, pepper, and red pepper flakes, then cook, stirring occasionally, for about 10 minutes, until corn is lightly charred. -Assemble the bowls! In each bowl, lay down some brown rice and pinto beans. Add on the steak slices, charred corn, tomatoes, queso fresco, and cilantro. PASTEL DE VERDURAS en freidora de aire, una idea de cena fácil, deliciosa y con muy pocos ingredientes, de hecho es una receta perfecta de aprovechamiento ya que puedes usar las verduras que tengas por la nevera. Hoy os traigo el tercer pastel de verduras en freidora de aire, ern realidad es una tortilla de verduras con queso que queda deliciosa. En esta ocasión el queso es opcional y puedes no ponerlo, lo único que nos aporta es el crujiente de la capa de arriba. Ingredientes: 4 huevos 2 cucharadas aceite de oliva virgen extra 1 cuchara pequeña pimentón dulce Pizca de sal 1 puñado de espinacas 3 zanahorias medianas ralladas y estrújalas para quitarles el exceso de agua cuando las rallas 1 puerro picado finito Queso emmental al gusto y opcional Elaboración: Ponemos en un papel de freidora de aire 4 huevos. En un bol pequeño, mezclamos el aceite de oliva virgen extra junto con el pimentón y la sal, mezclamos y echamos sobre los huevos. Añadimos el puerro, la zanahoria rallada y las espinacas, mezclamos todo bien y le rallamos queso. Llevamos a la freidora de aire durante 15 min a 180 grados. *Ojo, el tiempo de freidora puede depender del tamaño de los huevos y de la potencia de la misma, así que si ves que te queda poco cuajado deja unos minutos más. Would also be delish over rice, pasta, or potatoes 🤭 RECIPE (serves 4-6) 1 tbsp olive oil 1/2 of a yellow onion, diced 2 cloves garlic, minced 1/2 lb cauliflower florets 12 oz jar of roasted red peppers, drained and chopped 2 lbs chicken breasts or chicken tenders (boneless + skinless) 1 + 1/2 tsp paprika 1 tsp oregano 1 + 1/2 tsp sea salt 1/2 tsp black pepper Red pepper flakes, to taste 2.5 cups low sodium broth, more as needed 1 cup chopped baby spinach 3/4 cup crumbled feta 8 oz cream cheese Juice of 1 lemon 1. Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes. 2. Add cauliflower, red peppers, chicken, seasonings, and broth. Add more broth as needed until everything is fully covered. Bring to a simmer; cover with a lid and simmer for 10-15 minutes, or until chicken is cooked throughto 165F. 3. Remove chicken and shred with forks. 4. Return chicken to pot along with spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken a bit. Baked feta spaghetti squash recipe⬇️ Mixing my love for feta & spaghetti squash on this one and it was 🤌🏼 Feta Baked Spaghetti Squash •1/2 spaghetti squash •1/2 small block of feta •salt & pepper •Italian seasoning •1 C cherry tomatoes •1/4 C fresh basil (+more to top) •leftover or rotisserie chicken Slice you spaghetti squash lengthwise and then scoop out the seeds. Drizzle with a bit of avocado oil, sprinkle with salt, pepper & Italian seasoning. Place 1/2 feta block inside the squash & then cover with the tomatoes. Place the squash on a lined baking sheet, cut side up. Bake at 400 F for 40 minutes to an hour, depending on the size of your squash. You will know it’s done when you can poke the squash with a fork and it is soft. If the squash starts browning too much, you can loosely cover with foil. Once the squash is cooked, remove from oven and smash the tomatoes and cheese. Then, using a fork, separate the “noodle” strands of the squash. Next, add in the fresh basil and chicken. Ingredients: @Drink Poppi for the good vibes 2 chicken breasts 1/2 cup @Mike’s Hot Honey honey 1/2 cup @Primal Kitchen Foods dijon mustard Zest of 2 lemons Juice of 2 lemons 2 sweet potatoes, chopped into cubes 1 bag @Whole Foods Market coleslaw mix 1/3 red onion, diced A bunch of fresh parsley, chopped 3 heaping tbsp @FAGE greek yogurt A little shake of feta cheese Seasonings: @Simply Organic onion powder, smoked paprika, salt, pepper, @Graza olive oil, avocado oil Instructions: 1. Season chicken with above seasonings minus smoked paprika, brown on both sides in avocado oil on cast iron, then finish baking in oven at 425° until internal temp of chicken reaches 165°. Once finished cooking, let rest for a few minutes then cut into cubes 2. In a bowl, combine honey, dijon, 1 lemon zest, 1 lemon juice, pepper and big dash of smoked paprika 3. In same chicken pan, add in hot honey mustard and chicken, stir well making sure to get chicken juices off the bottom of the pan, coat evenly, bring to a boil, then simmer until sticky 4. Coat sweet potatoes with olive oil, onion powder, smoked paprika, salt, pepper 5. Bake sweet potatoes in oven at 425° until soft and golden brown 6. Add yogurt, 1 lemon juice and 1 lemon zest, honey, onion powder, and pepper to a bowl and stir until combined. Then, add in onion, parsley, feta, and coleslaw and stir until evenly coated and combined 6. Assemble sweet potato bowl and top with additional hot honey mustard, feta, and parsley 7. Healthy crispy chicken tenders & fries!🍗🍟 I think that one of the biggest keys to healthy eating is to make healthier versions of the foods that you LOVE so that you can eat them whenever you want! These air fried crispy chicken tenders and sweet potato fries really hit the spot - they are sooo delicious and easy to make! 🙌 I made this for 2 people but you can adjust the amount of sweet potatoes and chicken you make! 🍟 Sweet potato fries: - 4 sweet potatoes - 1 tbsp olive oil - 1/2 tsp each: paprika, garlic powder, salt, baking powder - 1/4 tsp pepper Preheat oven to 425. Slice the potaotes into long fry shapes. Add them to a big bowl and toss with olive oil and all the spices. Spread into a lined baking sheet and bake for 25-30 mins, tossing a few times while cooking. 🍗 Chicken tenders: - 5 chicken tenders (or slice chicken breast into long strips) - Salt & pepper - 1/2 cup breadcrumbs or panko - 1/2 tsp garlic powder - 1/2 tsp paprika - Olive oil spray (OR 1 beaten egg - I ran out!) Season both sides of the chicken with salt and pepper. Add the breadcrumbs to a shallow bowl with garlic powder, paprika, and a little salt and pepper and mix to combine. Lightly spray both sides of the chicken with olive oil OR dip in beaten egg, then coat both sides in breadcrumbs. Add to air fryer basket in a single layer and spray tops with oil. Air fry at 400F for 12 mins flipping halfway. Coat sweet potatoes with olive oil, onion powder, smoked paprika, salt, pepper 2. Bake in oven at 400° until soft and golden brown 3. Season chicken on both sides with above seasonings, brown on both sides on cast iron in avocado oil, then finish baking in oven at 400° until internal temperature reaches 165° 4. Ingredients (for 2 servings): -extra virgin olive oil -1/2 red onion, sliced -1 red bell pepper, sliced -kosher salt -freshly cracked black pepper -16 ounces steak of choice -1 ear corn, kernels removed -crushed red pepper flakes, to taste -2 cups cooked brown rice -1 can pinto beans, cooked -1 cup cherry tomatoes, halved -queso fresco, crumbled -fresh cilantro, finely chopped -2 WHOLLY®AVOCADO  smashed minis -juice of 1 lime Directions: -Heat some olive oil in a cast iron pan over medium-high. Add in the onion and bell pepper to sauté, and season with salt and pepper. Cook, stirring occasionally, for about 15 minutes, until veggies are deeply caramelized and softened. -Meanwhile, allow the steak to come to room temperature. Pat day and season generously with salt and pepper. Heat a little olive oil in a pan over medium-high, then add in the steak to sear. Cook for about 4 minutes per side, or until cooked to your liking. Set the steak aside, off the heat, to rest for at least 10 minutes. Once rested, cut into thin slices. -Heat a bit more olive oil in a small pan over medium-high, then add in the corn kernels. Season with salt, pepper, and red pepper flakes, then cook, stirring occasionally, for about 10 minutes, until corn is lightly charred. -Assemble the bowls! In each bowl, lay down some brown rice and pinto beans. Add on the steak slices, charred corn, tomatoes, queso fresco, and cilantro. PASTEL DE VERDURAS en freidora de aire, una idea de cena fácil, deliciosa y con muy pocos ingredientes, de hecho es una receta perfecta de aprovechamiento ya que puedes usar las verduras que tengas por la nevera. Hoy os traigo el tercer pastel de verduras en freidora de aire, ern realidad es una tortilla de verduras con queso que queda deliciosa. En esta ocasión el queso es opcional y puedes no ponerlo, lo único que nos aporta es el crujiente de la capa de arriba. Ingredientes: 4 huevos 2 cucharadas aceite de oliva virgen extra 1 cuchara pequeña pimentón dulce Pizca de sal 1 puñado de espinacas 3 zanahorias medianas ralladas y estrújalas para quitarles el exceso de agua cuando las rallas 1 puerro picado finito Queso emmental al gusto y opcional Elaboración: Ponemos en un papel de freidora de aire 4 huevos. En un bol pequeño, mezclamos el aceite de oliva virgen extra junto con el pimentón y la sal, mezclamos y echamos sobre los huevos. Añadimos el puerro, la zanahoria rallada y las espinacas, mezclamos todo bien y le rallamos queso. Llevamos a la freidora de aire durante 15 min a 180 grados. *Ojo, el tiempo de freidora puede depender del tamaño de los huevos y de la potencia de la misma, así que si ves que te queda poco cuajado deja unos minutos más. Would also be delish over rice, pasta, or potatoes 🤭 RECIPE (serves 4-6) 1 tbsp olive oil 1/2 of a yellow onion, diced 2 cloves garlic, minced 1/2 lb cauliflower florets 12 oz jar of roasted red peppers, drained and chopped 2 lbs chicken breasts or chicken tenders (boneless + skinless) 1 + 1/2 tsp paprika 1 tsp oregano 1 + 1/2 tsp sea salt 1/2 tsp black pepper Red pepper flakes, to taste 2.5 cups low sodium broth, more as needed 1 cup chopped baby spinach 3/4 cup crumbled feta 8 oz cream cheese Juice of 1 lemon 1. Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes. 2. Add cauliflower, red peppers, chicken, seasonings, and broth. Add more broth as needed until everything is fully covered. Bring to a simmer; cover with a lid and simmer for 10-15 minutes, or until chicken is cooked throughto 165F. 3. Remove chicken and shred with forks. 4. Return chicken to pot along with spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken a bit. Baked feta spaghetti squash recipe⬇️ Mixing my love for feta & spaghetti squash on this one and it was 🤌🏼 Feta Baked Spaghetti Squash •1/2 spaghetti squash •1/2 small block of feta •salt & pepper •Italian seasoning •1 C cherry tomatoes •1/4 C fresh basil (+more to top) •leftover or rotisserie chicken Slice you spaghetti squash lengthwise and then scoop out the seeds. Drizzle with a bit of avocado oil, sprinkle with salt, pepper & Italian seasoning. Place 1/2 feta block inside the squash & then cover with the tomatoes. Place the squash on a lined baking sheet, cut side up. Bake at 400 F for 40 minutes to an hour, depending on the size of your squash. You will know it’s done when you can poke the squash with a fork and it is soft. If the squash starts browning too much, you can loosely cover with foil. Once the squash is cooked, remove from oven and smash the tomatoes and cheese. Then, using a fork, separate the “noodle” strands of the squash. Next, add in the fresh basil and chicken. Season chicken with above seasonings minus smoked paprika, brown on both sides in avocado oil on cast iron, then finish baking in oven at 425° until internal temp of chicken reaches 165°. Once finished cooking, let rest for a few minutes then cut into cubes 2. In a bowl, combine honey, dijon, 1 lemon zest, 1 lemon juice, pepper and big dash of smoked paprika 3. In same chicken pan, add in hot honey mustard and chicken, stir well making sure to get chicken juices off the bottom of the pan, coat evenly, bring to a boil, then simmer until sticky 4. Coat sweet potatoes with olive oil, onion powder, smoked paprika, salt, pepper 5. Bake sweet potatoes in oven at 425° until soft and golden brown 6. Add yogurt, 1 lemon juice and 1 lemon zest, honey, onion powder, and pepper to a bowl and stir until combined. Then, add in onion, parsley, feta, and coleslaw and stir until evenly coated and combined 6. Assemble sweet potato bowl and top with additional hot honey mustard, feta, and parsley 7. Healthy crispy chicken tenders & fries!🍗🍟 I think that one of the biggest keys to healthy eating is to make healthier versions of the foods that you LOVE so that you can eat them whenever you want! These air fried crispy chicken tenders and sweet potato fries really hit the spot - they are sooo delicious and easy to make! 🙌 I made this for 2 people but you can adjust the amount of sweet potatoes and chicken you make! 🍟 Sweet potato fries: - 4 sweet potatoes - 1 tbsp olive oil - 1/2 tsp each: paprika, garlic powder, salt, baking powder - 1/4 tsp pepper Preheat oven to 425. Slice the potaotes into long fry shapes. Add them to a big bowl and toss with olive oil and all the spices. Spread into a lined baking sheet and bake for 25-30 mins, tossing a few times while cooking. 🍗 Chicken tenders: - 5 chicken tenders (or slice chicken breast into long strips) - Salt & pepper - 1/2 cup breadcrumbs or panko - 1/2 tsp garlic powder - 1/2 tsp paprika - Olive oil spray (OR 1 beaten egg - I ran out!) Season both sides of the chicken with salt and pepper. Add the breadcrumbs to a shallow bowl with garlic powder, paprika, and a little salt and pepper and mix to combine. Lightly spray both sides of the chicken with olive oil OR dip in beaten egg, then coat both sides in breadcrumbs. Add to air fryer basket in a single layer and spray tops with oil. Air fry at 400F for 12 mins flipping halfway. Post game dinner for my clients. Appetizer was a spinach, roasted chickpea, red onion, avocado & toasted almond salad with a citrus champagne vinaigrette. ✨ The entree was a pan seared halibut over freeing pesto & a bad of seared shallots, topped off with a butter, garlic, white wine & lemon reduction. I paired that with a side of creamy white sweet potato mash and broccolini sautéed in a garlic & red chili flakes. 😍😍 Dessert was my gluten free & refine sugar free raspberry rhubarb squares with a delicious crumble on top & a scoop of vanilla ice cream. ✨ I also made some banana oatmeal cranberry and walnut cookies for them to have as a treat the next couple of days. 🍪 #privatechef #nbaplayoffs #cooking #dinner #healthydinner #foodporn #foodie #seafood #glutenfree #halibut #personalchef #foodtok

31 days of healthy girl dinners for the holidays - day 29 🎄✨☃️ recipe below!! Ingredients: @Drink Poppi for the good vibes 2 sweet potatoes, chopped into cubes 2 chicken breasts 1 bottle @Primal Kitchen Foods golden bbq sauce 1 bag @Josie’s Organics coleslaw mix 1/4 red onion, diced A bunch of cilantro, chopped 1 avocado, diced 1/2 red bell pepper, diced 3 heaping tbsp @FAGE greek yogurt A little shake of @Whole Foods Market feta cheese Zest of 1 lime Juice of 1 lime Drizzle of @Mike’s Hot Honey Seasonings: @Simply Organic onion powder, smoked paprika, salt, pepper, @Graza olive oil Instructions: 1. Coat sweet potatoes with olive oil, onion powder, smoked paprika, salt, pepper 2. Bake in oven at 400° until soft and golden brown 3. Season chicken on both sides with above seasonings, brown on both sides on cast iron in avocado oil, then finish baking in oven at 400° until internal temperature reaches 165° 4. Cut chicken into pieces and toss with 3/4 bottle of bbq sauce 5. Add yogurt, lime juice and zest, honey, and pepper to a bowl and stir until combined. Then, add in onion, bell pepper, cilantro, coleslaw and stir until evenly coated. Finally, mix in avocado and feta. 6. Assemble and top with additional bbq, feta, and cilantro 7.
