Healthy girl dinner 🍯✨🍠 recipe below!! Ingredients: @Drink Poppi for the good vibes 2 chicken breasts 1/2 cup @Mike’s Hot Honey honey 1/2 cup @Primal Kitchen Foods dijon mustard Zest of 2 lemons Juice of 2 lemons 2 sweet potatoes, chopped into cubes 1 bag @Whole Foods Market coleslaw mix 1/3 red onion, diced A bunch of fresh parsley, chopped 3 heaping tbsp @FAGE greek yogurt A little shake of feta cheese Seasonings: @Simply Organic onion powder, smoked paprika, salt, pepper, @Graza olive oil, avocado oil Instructions: 1. Season chicken with above seasonings minus smoked paprika, brown on both sides in avocado oil on cast iron, then finish baking in oven at 425° until internal temp of chicken reaches 165°. Once finished cooking, let rest for a few minutes then cut into cubes 2. In a bowl, combine honey, dijon, 1 lemon zest, 1 lemon juice, pepper and big dash of smoked paprika 3. In same chicken pan, add in hot honey mustard and chicken, stir well making sure to get chicken juices off the bottom of the pan, coat evenly, bring to a boil, then simmer until sticky 4. Coat sweet potatoes with olive oil, onion powder, smoked paprika, salt, pepper 5. Bake sweet potatoes in oven at 425° until soft and golden brown 6. Add yogurt, 1 lemon juice and 1 lemon zest, honey, onion powder, and pepper to a bowl and stir until combined. Then, add in onion, parsley, feta, and coleslaw and stir until evenly coated and combined 6. Assemble sweet potato bowl and top with additional hot honey mustard, feta, and parsley 7.
