Sheng Jian Bao is a popular Chinese dish. Here's a vegan version of the recipe: Ingredients: For the dough: * 2 cups all-purpose flour (or more if needed) * 1 tsp instant yeast * 1/4 tsp salt * 3/4 cup warm water For the filling: * 2 cups mushrooms, finely chopped * 1 cup firm tofu, crumbled * 2 green onions, finely chopped * 2 cloves garlic, minced * 1 tbsp soy sauce * 1 tbsp hoisin sauce * 1 tbsp sesame oil * 1/2 tsp sugar * 1/4 tsp black pepper *2 Tbsp Tahini (forgot to film) 1. Mix flour, instant yeast, and salt. Add warm water and knead into a smooth dough. Let it rise for 1 hour. 2. Heat some oil in a skillet and sauté the mushrooms until they start to brown. 3. Add tofu to the skillet and continue stirring for a few minutes until the tofu is heated through. 4. Add green onions, garlic, soy sauce, hoisin sauce, sesame oil, sugar, tahini, and black pepper, to the skillet. Stir well to combine all the ingredients. 5. Remove the skillet from heat and set the filling aside to cool. 6. Punch down the dough and divide it into small portions. Roll each portion into a circle. 7. Place the cooled filling in the center of each dough circle and seal the buns. 8. Heat oil in a skillet. Cook the buns sealed side down until they turn golden brown. 9. Add water to the skillet, cover it, and steam the buns for 3-4 minutes until the water evaporates. 10. Remove the lid and cook for an additional 1-2 minutes to crisp up the bottoms. 11. Serve the hot buns with soy sauce or your preferred dipping sauce.
