Try this unique roast chicken this holidays..Tasty and flavorful seasoned with Mama Sitas Caldereta Mix. Peri Peri Makes 4 servings 1 pc Whole chicken, remove center bone 1.4 kg 4 cups Water 1 L 2 Tbsp. Salt 2 pcs. Bayleaf Marinade 1 pouch. Mama Sita’s Caldereta Mix. 50 g 6 cloves. Garlic, chopped 20 g 1 pc. Red onion,chopped 45 g 1 pc. bayleaf 1/2 pc Lemon juice 1 1/2 tbsp. Mama Sita’s Distilled Cane Vinegar 22.5 mL 1/4 cup. Olive oil. 60 mL 2 tbsp. Tomato Sauce 1/4 tsp. Ground black pepper 1.2 tsp. Mama Sita’s Labuyo Hot Sauce. 2.5 mL 1. Prepare chicken. 2. Brine chicken for 5 hours. Set aside. 3. Prepare the marinade mixture and blend together. 4. Drain chicken and pat dry. 5. Pour marinade mixture over chicken and massage well. Marinate for 1 hour. 6. Pre-heat oven 220 c for 18 minutes, then turn the chicken. 7. In a pot, boil water with paprika,pepper,sugar,salt,onion,garlic,lemon juice and half pouch of Mama Sita’s Caldereta Mix. Mix all together until all flavors are incorporated with each other. 2.Add the sausage, potato and corn. Boil until corn is cooked and potato softened. Add the shrimp and crab. Boil until crab and shrimp turns into orange color. remove from pot and drain in colander. Set aside and makle the sauce. 3. In a separate pan, heat oil and saute garlic until golden brown. Add onion and and melted butter. Saute until onion wilted. Add the remaining half pouch of Mama Sita’s Caldereta Mix,paprika,labuyo hot sauce,brown sugar,lemon juice,parsley, salt and ground black pepper. MILLION DOLLAR SPAGHETTI CASSEROLE Makes 4 servings 1 tbsp OIL 15 ml 3 cloves Minced GARLIC 12 g 1/4 cup Chopped ONIONS 30 g 3/4 cups GROUND CHICKEN 175 g 1 pouch MAMA SITA KIDDIE SPAGHETTI SAUCE 250 g 100 g(raw) COOKED SPAGHETTI ,as package direction 200 g (cooked) 1/4 cup Pasta water ( from cooking spaghetti) 60 mL For the white sauce : 1 tbsp UNSALTED BUTTER,softened 15 g 2 tbsp AP FLOUR 15 g 1,5 cups FRESH MILK 370 mL Pinch GROUND BLACK PEPPER 1/4 tsp SALT 1 g 1/2 cup GRATED MOZZARELLA CHEESE ( half mixed in sour cream ) 70 g CHOPPED PARSLEY,for garnish(optional) 1 Sauté garlic and onions until transluscent. 2 Add ground chicken and saute until brown .Add Mama Sita Kiddie Spaghetti Sauce. 3 Bring to a boil and lower the heat to simmer.Add cooked noodles.Mixed well to warm.Add 1/4 cup of pasta water and mix again. 4 For the white sauce : 1.Melt butter in a small saucepan over medium-low heat. 2.Whisk in flour to form a thick paste; cook and stir until golden in color, about 5 minutes. 3.Whisk in milk. Cover with foil. 6 Bake in a pre-heated air fryer @ 180c. for 15 minutes and uncover and bake for another 7 minutes until cheese melted and bubbly. Serve hot with toasted bread. Drain and Save the marinade. Heat oil in a frying pan. Pan-fry marinated porkchops until seared on both sides. Pour in the remaining marinade and water .Cover and cook over medium heat until it starts to boil.Simmer until the pork is tender. In another pan,heat oil and sear the onions until slightly brown on both sides. Add the seared onions to the meat.Continue cooking for another 5 minutes until sauce thickens. Remove from heat.
