IG is Ellie_teale btw just in case 😚😚 Ingredients: @Drink Poppi for the good vibes 2 chicken breasts 2-3 tbsp @FAGE Greek yogurt 1 avocado Juice of 1 lime Bunch of fresh cilantro 1 garlic clove Drizzle of @Mike’s Hot Honey @Cholula Hot Sauce Chipotle sauce A few tbsp @Good Culture cottage cheese @Mission Foods and @Siete Foods tortillas 2 sweet potatoes, diced @Yellowbird Foods sriracha Seasonings: @Simply Organic onion powder, smoked paprika, salt, pepper, @Graza olive oil Instructions: 1. Season sweet potatoes with above seasonings and olive oil, and bake at 425° for an hour or so, until crispy 2. In a pot, bring water and chicken to a boil until internal temp of chicken reaches 165° 3. Shred chicken, then add in cottage cheese, cilantro, chipotle sauce, and seasonings above minus smoked paprika 4. Add shredded chicken to tortillas and fold in half 5. Brown quesadillas on both sides in pan until crispy 6. In a blender, combine yogurt, avocado, garlic, honey, salt, pepper, cilantro, and a little water and blend until smooth 7.
