Tonight I made their Extra Creamy Scrambled Eggs (recipe by J. Kenji López-Alt) - a 5-minute technique that converted this low-and-slow loyalist. The secret is a weird cornstarch slurry and probably too much butter (but that's why they're perfect). If you think you know scrambled eggs, this might change your mind.
