Part 20 of my 50-part series where I cook all 50 of the NYT’s most popular recipes. Today I cooked Kay Chun’s Coconut-Miso Salmon Curry. Sorry in advance that I look extra stoic in this one I think I got stage fright filming this in front of another person. We’ll work on it. The dish had an amazing balance of rich umami flavors with a little sweetness. The salmon was buttery and tender but I think any white fish would also be a delicious option. The ginger and garlic have zingy notes. It was warm, it was satisfying, it was creamy. Loved it. Prep time: 45 mins Taste: 4.7/5 - I would’ve loved a spicy kick. Next time I’ll make it with NYT’s cilantro rice recipe which includes jalapeños Difficulty: Moderately easy - just make sure that the onions are fully softened before moving onto the next step, and that the salmon is cooked, but not overcooked (you can test this by pulling apart one of the pieces with a fork) Would I make it again?
