Egg Roll in a Bowl My girls and I love this recipe! Today, I switched it up a bit and used ground chicken instead stead of pork. I changed a couple ingredients too. I’ll share it below. The original recipe can be found in my first cookbook and meal plans as it is something I ate often while losing my weight. www.Kristysketolifestyle.com RECIPE- Makes 5 cups Ingredients: 1 lb ground chicken 16 oz bag coleslaw 1/4 cup liquid aminos 2 eggs 1/2 Tbsp minced garlic 1 Tbsp sambal oelek 1 Tbsp sugar free ketchup 1 Tbsp zero sugar honey 1 Tbsp rice vinegar 1/2 Tbsp golden or powdered monkfruit sweetener 1 tsp ground ginger 1/2 tsp red pepper flakes Directions: 1. In a skillet over medium heat, scramble the ground chicken. Drain excess liquids if needed. 2. Next, add in all of the ingredients except for the eggs. 3. Stir it all together and cook for about 5 minutes, stirring often. 4. Create a hole in the middle and crack the eggs in the skillet. 5. Scramble until cooked through and then stir to combine.
