Muhammara (Roasted Pepper Dip) Ingredients: • 4 red peppers • 3 tbsp olive oil (divided) • 70g walnuts • 30g breadcrumbs • 1 garlic clove • 1 tsp cumin • 1/2 tsp sumac • 1/3 tsp chili flakes (or to taste) • 1/2 lemon (juice only) • 2 tbsp pomegranate molasses • Salt and pepper to taste For Garnish: • Olive oil • Pomegranate molasses • Crushed walnuts • Parsley or coriander Method: 1. Preheat the oven to 200°C (fan). 2. Place peppers on a baking tray lined with parchment and drizzle them with 1 tbsp olive oil. Roast for about 40 minutes, flipping halfway through. 3. When ready, place them in a bowl and cover with a lid or cling film, allowing them to cool. Then peel and deseed. 4. Place the roasted peppers in a food processor along with all remaining ingredients and process until smooth. (Alternatively, place in a bowl and use an immersion blender to blend.) 5. Transfer to a serving platter, garnish with olive oil, pomegranate molasses, crushed walnuts, and coriander. Enjoy! #dip #muhammara #mediteranian #food
