Chicken Strudel (makes 2 strudels) Ingredients: • 1 tbsp olive oil • 350g ground chicken • 1 shallot (finely chopped) • 2 garlic cloves (minced) • 100g spinach • Salt & pepper to taste • 200g feta • 1 tbsp fresh thyme leaves • Bunch of coriander (finely chopped) • 80g melted butter • 10 sheets phyllo dough • Sesame seeds for garnish Method: 1. Heat the oil in a frying pan and add your ground chicken; season with salt and pepper, cooking until browned. 2. Add shallots and garlic, cook for 2 minutes, then add spinach and mix. Cook until spinach is wilted, and there is no liquid in the pan. 3. Transfer the mixture to a bowl, stir in feta, thyme leaves, and coriander. Set aside. 4. For each strudel, place 1 phyllo sheet on the working surface, and generously brush it with melted butter. Repeat to create a total of 5 layers. 5. Spread half of the filling over the top sheet of phyllo, leaving about 2 cm empty around the edges and about 5 cm from the other end of the dough. Roll tightly starting on the long side, folding in the edges to form a log. Repeat with the second one. 6. Transfer the strudel onto a baking sheet covered with parchment, seam side down, and brush with more melted butter on top. 7. Bake at 190°C for about 30-35 minutes or until golden. 8. When ready, let the strudel cool a bit, then slice and serve with your favorite sauce. 9. Enjoy! #strudel #chicken #cooking #food
