Biscotti Ingredients: • 285g bread flour • 1 tsp baking soda • 3 eggs • 185g sugar • 1/3 tsp salt • 200g almonds (crushed in half) • Zest of 1 lemon Instructions: 1. Preheat the oven to 150°C. 2. In a bowl, whisk together eggs, sugar, salt, lemon zest, and vanilla until thoroughly combined. 3. Sift in flour and baking soda, and mix the dry ingredients until well incorporated. 4. Gently fold in the almonds until evenly distributed. 5. Shape the dough into a log on a parchment-lined baking tray, using a spoon. 6. Bake for approximately 55 minutes to 1 hour or until the log is brown and firm. Remove from the oven and allow it to cool for 10 minutes. 7. Reduce the oven temperature to 135°C. 8. Cut the log into 1cm thick slices. 9. Place the slices back on the parchment-lined tray, lay them flat, and bake for 10 minutes on one side. Flip and bake for an additional 10 minutes until they turn golden brown and crisp. 10. Allow them to cool completely before enjoying! #biscotti #baking #italian #dessert
