Ramazan Pidesi (makes 4) Ingredients: 500g bread flour 1tbsp yeast 1tsp sugar 1tsp salt 150ml lukewarm water 200ml warm milk 2tbsp olive oil For the egg wash: 1tbsp plain yoghurt 1tbsp water 1egg yolk For the garnish: Nigella seeds Sesame seeds Method: 1. In a bowl, combine all dry ingredients and mix well. Add water, milk, and olive oil, then mix until thoroughly combined. Cover and allow the mixture to rise in a warm place for 30 minutes. 2. Once the dough has risen, lightly grease your hands and working surface with oil. Transfer the dough onto the working surface and shape it into a ball. Divide the dough into 4 equal parts and shape each into a ball. 3. Place two dough balls onto a baking tray lined with parchment paper, leaving enough space between them. Cover with greased cling film and let them rise for 20 minutes. 4. Prepare the egg wash by combining all the ingredients. Preheat the oven to 200°C and place an empty tray on the bottom shelf. 5. Brush each dough ball with the egg wash and flatten them into disks using your hands. Create indentations in the dough about 2cm from the edge to form a circle, then make vertical and diagonal indentations to create a diamond pattern. Cover with cling film and let it rest for 15 minutes. 6. Brush the dough with the egg yolk once more and repeat the indentations. Sprinkle sesame seeds and nigella seeds on top, then place the tray in the oven. Add a cup of boiling water to the empty tray on the bottom shelf and bake for approximately 20 minutes or until golden brown. 7. Repeat the process with the remaining dough and enjoy with your favorite dip! #pide #bread #baking #food
