This is the ULTIMATE SHAVED BRUSSELS SPROUTS SALAD with lemon shallot vinaigrette and it is a 12/10—like most definitely one of the best salads I have EVER made and it will go front and center on my blog :). This salad is easy to make and a total crowd pleaser—a great one to serve at all your holiday gatherings this year! It also happens to be fantastic for meal prep; the brussels soften just a bit and the salad gets more and more delicious by the day! Makes 4 meal salads or 8 servings 1 1/2 lbs brussels sprouts, shaved (approx 6 cups) 1 cup pomegranate arils 1 large red pear, diced 1/2 cup pepitas (pumpkin seeds) 1/2 cup parmigiano reggiano, finely grated 1/2 cup fresh parsley, chopped Dressing: 1/3 cup extra virgin olive oil 1/4 cup lemon juice (2 lemons) 1 large shallot, finely diced 1 tsp kosher salt 1/2 tsp ground black pepper For the dressing, whisk together the olive oil, lemon juice, shallot, salt and pepper. Taste and adjust s&p as needed. For the salad, shave the Brussels sprouts. You can do this in your food processor or using a handheld mandolin. Or, you can buy pre-shredded brussels sprouts. Add the shaved brussels to a large bowl, followed by the pomegranate, diced pear, pepitas, parmigiano reggiano cheese, and parsley. Pour the dressing on top, and toss to coat well. Taste and adjust seasonings. Add extra grated cheese on top and enjoy! The longer this salad sits in the dressing, the softer the Brussels sprouts get and the more delicious this salad is—your leftovers will be amazing!
