SHAVED BRUSSELS SALAD WITH ORANGE-HONEY-PAPRIKA VINAIGRETTE!! Brussels, goat cheese, savory rosemary roasted pecans, dried apricots, and this zesty orange dressing! • For the dressing: Juice of one large orange 1/3 cup olive oil 1 1/2 tbsp honey 2 tbsp white wine vinegar 1 tbsp whole grain mustard 1/2 tsp salt 1/2 tsp paprika 2 tsp orange zest 1 garlic clove, minced • For the pecans: 1/3 cup pecans 1-2 tsp olive oil 1/2 tbsp honey 1/4 tsp salt Pepper to taste 1 tsp dried rosemary • For the salad: 1 1/2 lbs Brussels sprouts, shredded 1/2 cup chopped dried apricots 3/4 cup chopped red onion 3/4 cup goat cheese crumbles 1/2 cup chopped fresh parsley Salt • 1️⃣Preheat the oven to 400. 2️⃣Make the dressing. Add all ingredients to a jar with a lid. Add the lid and shake vigorously until well combined. 3️⃣Make the pecans. Add all ingredients and mix to combine. Place the pecans on a baking sheet and bake for 7 minutes. Once they are cooled, chop them up. 4️⃣Assemble the salad.
