Ok, what are you having for dinner tonight, because we’re having this: Spiced Roasted Potatoes, Cauliflower & Chickpeas and Creamy Hummus. INGREDIENTS: 4 tbsp olive oil 1 x 400g (240g drained weight) can chickpeas 400g baby potatoes, washed and halved 400g cauliflower florets 2 tbsp cornflour 1 tsp sumac 1/2 tsp cumin 1tsp paprika 1tsp pul biber 1 tsp garlic powder 3/4 tsp sea salt flakes 1/2 tsp coarse black pepper 1 tsp dried oregano 1 tbsp sesame seeds Hummus: 1 x 660g jarchickpeas 1-2 finely chopped garlic cloves (to your own taste) 6 tbsp tahini 1 tbsp extra virgin olive oil 1/2 tsp salt 60-80ml freshly squeezed lemon juice (or to your own taste) A little ice cold water to loosen the mixture if necessary (just add a tbsp at a time) Method: Preheat your oven to 200c fan / 220c. Brush a large non-stick baking tray with 1 tbsp of olive oil and pop in the oven for 10 mins while you prep the vegetables. Pat chickpeas completely dry and pat potatoes and cauliflower dry too. Add vegetables and chickpeas to a large bowl, sprinkle over the cornflour, and mix well with your hands until fully coated. Add 2 tbsp olive oil to the bowl along with sumac, cumin, paprika, pul biber, garlic powder mix again, add remaining olive oil, salt, pepper, oregano and sesame seeds, stir well again. Add everything evenly to hot tray (oil should sizzle), placing potatoes cut side down, the pop tray near the top of the oven (in between middle and top racks) Roast for 30-35 mins, turning potatoes and cauliflower halfway through (if some cauliflower florets start browning too much, remove before the 30 minutes is up) until crispy all over. While the vegetables roast, whizz all the hummus ingredients together in a blender, then spread over a large platter. Top with the roasted vegetables and a sprinkling of sumac, cumin, paprika, pul biber and fresh parsley, a generous drizze of extra virgin olive oil. Could not stop eating these when I made them and once you try you’ll understand 🫶🏼 For the carrots: 6 large carrots, sliced in half lengthwise 2 tbsp olive oil 1 tbsp honey 1/4 tsp garlic powder 1/4 tsp smoked paprika Salt, to taste For the chickpeas: 1 jar/can of chickpeas 2 tbsp harissa sauce 1 tbsp olive oil Salt + pepper For serving: 1/2 cup plain greek yogurt 2-3 oz feta 1 tbsp fresh parsley, chopped 1-2 tbsp tahini Chili-infused olive oil 1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add your carrots and toss with the olive oil, honey, garlic powder, smoked paprika, and a generous pinch of salt. Bake for 15 minutes. 2. Meanwhile, drain and rinse your chickpeas. Pat dry with a clean kitchen towel, then toss in a bowl with the harissa, olive oil, and salt and pepper. 3. After 15 minutes, flip all the carrots over and move to one side of the pan. Spread the chickpeas out on the other side. Bake for 20-25 minutes. 4. Allow carrots and chickpeas to cool for 5-10 minutes. Spread yogurt out on serving dish, then add carrots, chickpeas, and remaining toppings. Garbanzos enchilados Inspired by my papas a la diabla (pinned) same recipe but tweaked, I used garbanzos instead of potatoes and subbed butter for avocado oil. Ingredients: 1 pound of cooked garbanzos 8 chiles de arbol 1 guajillo pepper, deseeded 6 garlic cloves, (divided, 3 whole to blend, 3 minced) The juice of two limes, more to taste 1/4 tsp of whole peppercorns 5 Tbsp avocado oil, divided 2 tsp vegetable bouillon powder, more to taste Salt to taste Directions: 1. Heat up a pan, add 1 Tbsp of avocado oil, lightly fry 3 garlic cloves, chiles de arbol and chile guajillo, careful not to burn the peppers. 2. Place peppers and garlic in a blender cup with the juice of 2 limes, vegetable bouillon, 1 Tbsp avocado oil, black peppercorns. Blend until mostly smooth with visible specs and bits. 3. In the same pan where the peppers were fried add 3 Tbsp of avocado oil, minced garlic, cook until golden brown. 4. Incorporate cooked garbanzo beans, cook until they lightly brown. 5. Pour salsa into pan with garbanzos, mix, continue cooking for 5 minutes or until mixture has deepened in color. Adjust salt to taste. Enjoy with freshly squeezed lime juice. Ok, what are you having for dinner tonight, because we’re having this: Spiced Roasted Potatoes, Cauliflower & Chickpeas and Creamy Hummus. INGREDIENTS: 4 tbsp olive oil 1 x 400g (240g drained weight) can chickpeas 400g baby potatoes, washed and halved 400g cauliflower florets 2 tbsp cornflour 1 tsp sumac 1/2 tsp cumin 1tsp paprika 1tsp pul biber 1 tsp garlic powder 3/4 tsp sea salt flakes 1/2 tsp coarse black pepper 1 tsp dried oregano 1 tbsp sesame seeds Hummus: 1 x 660g jarchickpeas 1-2 finely chopped garlic cloves (to your own taste) 6 tbsp tahini 1 tbsp extra virgin olive oil 1/2 tsp salt 60-80ml freshly squeezed lemon juice (or to your own taste) A little ice cold water to loosen the mixture if necessary (just add a tbsp at a time) Method: Preheat your oven to 200c fan / 220c. Brush a large non-stick baking tray with 1 tbsp of olive oil and pop in the oven for 10 mins while you prep the vegetables. Pat chickpeas completely dry and pat potatoes and cauliflower dry too. Add vegetables and chickpeas to a large bowl, sprinkle over the cornflour, and mix well with your hands until fully coated. Add 2 tbsp olive oil to the bowl along with sumac, cumin, paprika, pul biber, garlic powder mix again, add remaining olive oil, salt, pepper, oregano and sesame seeds, stir well again. Add everything evenly to hot tray (oil should sizzle), placing potatoes cut side down, the pop tray near the top of the oven (in between middle and top racks) Roast for 30-35 mins, turning potatoes and cauliflower halfway through (if some cauliflower florets start browning too much, remove before the 30 minutes is up) until crispy all over. While the vegetables roast, whizz all the hummus ingredients together in a blender, then spread over a large platter. Top with the roasted vegetables and a sprinkling of sumac, cumin, paprika, pul biber and fresh parsley, a generous drizze of extra virgin olive oil. Could not stop eating these when I made them and once you try you’ll understand 🫶🏼 For the carrots: 6 large carrots, sliced in half lengthwise 2 tbsp olive oil 1 tbsp honey 1/4 tsp garlic powder 1/4 tsp smoked paprika Salt, to taste For the chickpeas: 1 jar/can of chickpeas 2 tbsp harissa sauce 1 tbsp olive oil Salt + pepper For serving: 1/2 cup plain greek yogurt 2-3 oz feta 1 tbsp fresh parsley, chopped 1-2 tbsp tahini Chili-infused olive oil 1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add your carrots and toss with the olive oil, honey, garlic powder, smoked paprika, and a generous pinch of salt. Bake for 15 minutes. 2. Meanwhile, drain and rinse your chickpeas. Pat dry with a clean kitchen towel, then toss in a bowl with the harissa, olive oil, and salt and pepper. 3. After 15 minutes, flip all the carrots over and move to one side of the pan. Spread the chickpeas out on the other side. Bake for 20-25 minutes. 4. Allow carrots and chickpeas to cool for 5-10 minutes. Spread yogurt out on serving dish, then add carrots, chickpeas, and remaining toppings. Garbanzos enchilados Inspired by my papas a la diabla (pinned) same recipe but tweaked, I used garbanzos instead of potatoes and subbed butter for avocado oil. Ingredients: 1 pound of cooked garbanzos 8 chiles de arbol 1 guajillo pepper, deseeded 6 garlic cloves, (divided, 3 whole to blend, 3 minced) The juice of two limes, more to taste 1/4 tsp of whole peppercorns 5 Tbsp avocado oil, divided 2 tsp vegetable bouillon powder, more to taste Salt to taste Directions: 1. Heat up a pan, add 1 Tbsp of avocado oil, lightly fry 3 garlic cloves, chiles de arbol and chile guajillo, careful not to burn the peppers. 2. Place peppers and garlic in a blender cup with the juice of 2 limes, vegetable bouillon, 1 Tbsp avocado oil, black peppercorns. Blend until mostly smooth with visible specs and bits. 3. In the same pan where the peppers were fried add 3 Tbsp of avocado oil, minced garlic, cook until golden brown. 4. Incorporate cooked garbanzo beans, cook until they lightly brown. 5. Pour salsa into pan with garbanzos, mix, continue cooking for 5 minutes or until mixture has deepened in color. Adjust salt to taste. Enjoy with freshly squeezed lime juice. Das ganze dann serviert mit einem Glas Ayran 🔥 We made chickpea dürüm today, one of the irresistible specialties of Gaziantep, where we really couldn't get enough of it 😋 First we boiled the chickpeas we had soaked in water with bones, then pan fried them with spices, deep fried potatoes and stuffed them between our homemade fresh and warm bread with chips and salad. All of that served with a glass of ayran 🔥 Bugün Gaziantep deyiz. Gaziantep’in tadına doyulmayan lezzetlerden biri olan nohut dürüm yaptık 😋 Bütün samimiyetim ile söylüyorum: Gerçekten de tadına doyamadık.
