I took the timings from another recipe I found online and they seemed to work well so I’ve included below 😊 I added rosemary and thyme for some extra flavour 😋 👩🏽‍🍳 Preheat your air fryer for 5 mins at 200 degrees C 👩🏽‍🍳 Calculate the cooking time by 15 mins per lb/450g. If you like your beef rare don’t add any time. Medium-rare add 5 mins. Medium add 10 mins. Medium-well done add 15 mins, Well done add 20 mins (would be interested to know if these timings work for you!?!) 👩🏽‍🍳 Once the air fryer has been preheated, air fry your beef at 210 degrees C for 5 mins (acts like searing it in a pan) then continue cooking for the remainder of the time at 180 degrees C. 👩🏽‍🍳 Make sure you rest the beef for 20 mins (or more) under foil. Part 3 of the xmas series… Cauliflower is one of my favourite veggies even if it did hit the floor (there was a tray there for you health and hygiene keyboard warriors). Don’t waste the leaves or stems they are amazing, build those flavours by roasting them with some spice. For the béchamel or mornay or bloody cheese sauce go bold with the flavour and burn that butter, add some garlic and influence the milk (make sure you find the cloves as they are not nice to eat). Whack it all in the oven until she is bubbling and you are good. If you want to do this the day before load up a tray then just whack it in the oven until hot!!! Part 17 of the xmas series…Turkey crown wet brine. So this can seem quite scary leaving a bird in some lube for a long period of time but it is common practice to make stuff taste bloody delicious. I go with a 5% brine so figure out 5% of the total weight of water (weight of water x 0.05) then just don’t over think it too much chuck in sexy flavours, spices herbs, orange peel, lemon peel etc. Cool that mix fullyNext thing is to make sure you only leave it in the brine for the set time otherwise it will start to break down and be weird. For each 500g 1 hour, so if you are doing a big bird she’s going to take some time… I have done whole bird in Yeti cool boxes before. The only downside with this method is having enough fridge space, that’s why a cool box works really well! I kept an eye on the temperature. Once the time is up, remove from the brine and pop in the fridge. Ready for cooking the next day. Part 2 is coming this evening! Part 18 of the xmas series… so for the cooking again don’t overthink it you have done a great job with the brine and she will be soooo moist! You can slap some butter under the skin but it won’t be vegan then! Try and raise it up so that air can circulate under the bird otherwise she won’t cook evenly! I gave her about 3 1/2 hours kept checking them temperature until it hit around 70c for safety then let it rest for 1 - 1 1/2 hours covered. I do think a big ham is glorious for xmas though as you can pick at it for days and weeks.. if you do a big old bad boy don’t carve it all at once, carve it as you need it so it stays nice and moist! Yep MOISSSST! When you poach the ham joint fill the liquid with delicious flavours so that ham absorbs all of that goodness, drain it then cover in a glaze of your choice! Bake it 160c low and slow baby so you can build up that glaze! I know you will all want the chilli jam video… I will try and dig it out! no fail prime rib roast 😍 ingredients - 5-10lb rib roast (does not HAVE to be prime , usda choice is fine too!) - kosher salt - a binder for the meat (I use Japanese bbq but oil will work fine) - favorite steak seasoning - 2 tbsp butter - 1 tbsp oil for the horseradish sauce - 1 cup Greek yogurt - 1/2 cup mayo - 2tbsp horseradish (adjust to your liking) - 1 tbsp Dijon mustard (or any spicy mustard) - 1 tbsp white vinegar 🔗 linking a thermometer and the steak seasoning I used in my store front #amazonassociate ⬆️ 1. Coat rib roast in kosher salt and let sit in fridge uncovered up to 24hrs 2. Preheat oven to 275° 3. Remove from fridge and coat in a binder of choice and heavily season with your favorite steak seasonings 4. Let sit for 10-20 min before placing in oven to let seasonings adhere to meat 5. Insert oven safe thermometer and set to 120° (for medium rare) and 125° (for medium) 6. When internal temp reaches 120° (roughly 15-20 min per lb of rib roast) 7. Rest the rib roast for 20-30 min lightly covered in foil 8. Get a pan scorching hot with butter and oil and sear each side for about 30 sec - 1 min on each side 9. Slice and serve!
