To make this easy COLD PCOS summer salad ☀️: Cook 12 oz shelled edamame + 1.5 c corn. Toss with 1 can drained black beans, 1.5 c halved grape tomatoes, 1/4 c minced cilantro, 1/2 diced red onion, and a shake of salt + pepper. Toss with dressing 👇 To make dressing: boil 1/4 c raw cashews in water for 15 mins. Drain and blend with 1/2 c cilantro, 2 garlic cloves, 2 Tbsp diced jalapeno, 1 avocado, 3 Tbsp lime juice, 1/4 tsp salt, and 3/4 c water 💥 I only used about 1/2 the dressing on this salad!
