I create delicious recipes and I talk about allll thangs PCOS and women’s health related 💗 This is how to make my Garlicky Broccoli Shrimp ⬇️ * 3 Tbsp olive oil, divided * 8 garlic cloves, sliced thin * 4 cups chopped broccoli * 2 red bell peppers, diced * 1 lb raw shrimp, deveined and peeled * 2 tsp fresh lemon juice * Salt + pepper 1. Heat 2 Tbsp oil over medium in a large skillet pan and add in half the garlic. Cook until starting to brown (about 1 min), then add in broccoli and red pepper, along with a generous pinch of salt and pepper. Cover and cook until broccoli is tender (about 5-8 mins; add 1 Tbsp water if needed to help it along) 2. Transfer the broccoli mixture to a bowl and add the remaining 1 Tbsp olive oil to the pan along with the remaining garlic. Cook until starting to brown (about 1 min), then add in shrimp and cook and another pinch of salt and pepper. Cook until shrimp are *just* cooked through and pink (another 3-5 mins). 3. Add back in the broccoli mixture to the shrimp and stir in lemon juice. Serve hot. I added a few glugs of soy sauce and some red chili flakes to my bowl and it boosted the flavorrrrr, and I also served mine with a lil brown rice for some healthy fiber-rich carb!
