Broccoli Cheddar Soup // If you’re a fan on this soup at Panera, you have to try making it at home because it’s easy and a family favorite! Warm & cheesy, I find the smaller you cut up the broccoli the better for pickier eaters, like my son. I also like this version because it’s lighter than similar recipes, just using a cup of milk, no heavy cream, and skips using canned condensed soups with added ingredients by instead making a roux to achieve a rich, creamier texture. #recipe 4 tbsp unsalted grass-fed butter 1 medium yellow onion, chopped 2 stalks celery, chopped 1/4 cup organic all-purpose flour 4 cups vegetable or bone broth 3 cups broccoli, finely chopped 1 carrot, grated 1 cup grass-fed whole milk 3 cups cheddar, shredded Salt & pepper, to taste In a large pot over medium heat, melt butter. Add onion and celery and cook until soft, 5 minutes.Whisk in flour and let cook 1 minute. Slowly add broth and season with salt and pepper. Stir in broccoli and carrots. Bring to a boil and reduce heat to low. Let simmer until vegetables are tender, about 20 minutes. Slowly add milk and bring to a simmer, then stir in cheddar. Top with more cheddar.
