Greek Yogurt Mini Muffins // I love baking with Greek Yogurt! It makes baked good extra moist and provides added nutrients, like protein, calcium, & B vitamins. So skip the Little Bites in the aisles of the grocery store, and make these healthier mini muffins for lunchboxes or a snack at home. Perfect to make ahead start of the week to store in the fridge and change up the toppings to make them your kids favorites! #recipe 1 1/2 cups organic all-purpose flour 1/4 tsp salt 1 tsp baking powder 1/2 tsp baking soda 1 cup plain Greek yogurt 1/4 cup avocado or coconut oil 2 eggs 1/2 cup pure maple syrup 1 tsp vanilla extract Toppings of choice: chocolate chips, sprinkles, fruit, nuts, etc. In a bowl, whisk together the flour, salt, baking soda, and baking powder. In a separate bowl, whisk together the greek yogurt, maple syrup, eggs, vanilla, and oil. Add the dry ingredients to the wet, and mix together until combined. Add toppings of choice and store to combine. Use a mini muffin pan and spray with cooking oil spray (avocado, coconut, etc.) and divide batter using a tablespoon portion. Bake the muffins at 350F 15-18 minutes.
