Chocolate Pretzel Granola Bars are a great recipe to add to your meal prep๐๐ป๐ Plus- FREE WEBINAR ON KIDS NUTRITION in my bio ๐ โค๏ธโค๏ธ๐๐ -makes 20 servings!- 1 cup natural smooth sunflower butter (you can replace with another smooth nut butter) โข 1/3 cup honey and 1/2 cup of date honey (if you cant find it , you can stick to 2/3 cup honey) โข 1 teaspoon vanilla extract 1/2 tsp cinnamon โข ยฝ teaspoon fine sea or himalayin salt 1/2 cup crushed sourdough pretzels- I like to keep some larger pieces. โข 2ยฝ cups whole rolled oats โข โ
cup dark mini chocolate chips (or semi sweet chocolate, chopped into small pieces to help it hold together) โข 3 tablespoons chia seeds for omega 3s (you can also use hemp to boost the protein!) Line an 8x8 baking pan with parchment paper. 2. In a large bowl, stir together the peanut butter, honey, vanilla, cinnamon, and salt, until smooth. 3. Add the oats, chocolate chips and chia seeds. Stir together until uniform. Add the pretzels. Stir to combine and press firmly into the pan. Use a second piece of parchment paper and the back of a platr to smooth and flatten the mixture. Chill for at least 1 hour, then slice into bars. I like to store them in parchment paper in the freezer. They stay good for up to a month. I cut them into 20 bars (4x5 across). It comes out to about 115 cals, 3g of protein, and 2g of fiber each.
