If you enjoy an egg or two for breakfast, then listen up! BIRD FLU has been found in the US, and experts have a warning for all you Egg lovers! Firstly, some context, multiple states are struggling with outbreaks of the H5N1 virus, otherwise known as Bird Flu. Until recently it was thought to only infect poultry but cases of cattle being infected have also surfaced recently. Not only that but it was just confirmed that a Texas dairy farmer caught the virus recently, making him only the 2nd person in the U.S. to have caught the H5N1 virus. And this virus is serious business, with a mortality rate of about 60%. Ok so back to the warning about eggs. The U.S.D.A. says that the disease, quote, "cannot be transmitted through safely handled and properly-cooked eggs". And by "properly-cooked" eggs, they mean FULLY cooked to an internal temperature of a hundred and sixty-five degrees Fahrenheit. In other words, no more liquid yolks. So no sunny-side up, no poached, and not even over-easy! The recommendations say you should stick to hard-boiled and scrambled. And for the "safely handled" part? That means keeping them in the fridge at forty degrees or lower, trashing any with cracked or dirty shells, and thoroughly washing your hands, utensils, and surfaces after any contact with raw eggs.
