These are Katherine's favourite noods 🍜 Serves: 2 Prep time: 3 minutes Cook time: 3 minutes Special tools: large bowl Ingredients 1 package momofuku spicy soy noodles 3 bok choy, halved 4 Chinese broccoli, chopped 4 large oyster mushrooms, ripped 2 pencil chillies, sliced 1/2 bunch green onion 1 egg yolk 1 tablespoons mayonnaise 1 splash EVOO Method 1. Sauté mushrooms, bok choy and broccoli with chillies in a pan. 2. Blanch noodles in water and add the sauce package to a large bowl with egg and mayonnaise. Temper with 1/4 cup noodle water and stir. 3. Toss noodles with veggies and some extra water. Add to sauce and stir. 4.
