Bone-in skin-on chicken thighs Season however you’d like 1 small butternut squash, peeled and cubed Olive oil Garlic powder Sage Salt Pepper 1 shallot, diced 1 clove garlic, minced 3/4 cup orzo 1 cup chicken broth 1/4 cup goat cheese 2-4 tbsp grated Parmesan Spread butternut squash onto a baking sheet lined with parchment paper. Season with salt, pepper, garlic powder, and sage. Roast at 425°F for 40 minutes. Toss halfway through cooking. Heat a large skillet over medium-high heat. Add oil. Cook chicken on both sides until internal temp reaches 165°F. Set aside. Reduce heat to medium. Add shallot to the skillet and cook for 2-3 minutes, stirring occasionally. Add garlic and stir, cook for 1 minute. Add butternut squash and orzo. Toss, then add chicken broth and bring to a simmer. Add chicken to the skillet, reduce heat to low, cover and cook until broth is absorbed and orzo is al dente. Remove the chicken, add goat cheese and Parmesan.
