Here’s how I did on my first final exam of culinary school! We have been prepping and getting ready for these exams for a few lesson now, and our first of two exams is all about making a dish starting with a whole fish and a set list of ingredients. I wanted to do something fun but also complicated to challenge myself and I definitely had a lot of components and different things to focus on while I was making this dish. I also wanted to make an effort to stay as clean and organized as possible throughout the exam and I ended up making something that I am really proud of taste wise, but not so much conceptually and visually. In hindsight I should have had three pieces of the mosaic on the plate each individually garnished and with contrasting colors (my idea was to have it monochromatic, but it ended up being too much) but still I had a lot of fun winging all of the recipes and making this dish come together in just a couple of hours. I really can’t believe that there is only one more lesson to share with you all, it really is just the beginning of our culinary journeys together, and there is so so so much more I am excited to share with you.
