Pozole Rojo Recipe: Pork: 5 pigs feet split in half 15 lbs boneless pork cushion (cubed) 12 pieces of pork neckbone 2 onion halves 3 garlic heads Water Instructions: Add pig feet, pork cushion and pork neckbone, onion halves, garlic heads halved, fork and salt to a 40 quart pot and cover with water half way, cook on high heat. Boil guajillo and ancho chiles that you boiled to a blender with oregano, onion, salt and water. Add your red sauce to your pork and broth and let it cook for 2-3 hours on medium heat. When the 3 hours are up, add your @juanitasfoods hominy and let it cook for 30 more minutes on low heat, then serve and top with shredded cabbage, onion, red raddishes, salsa macha and enjoy! (Red Sauce Recipe BELOW⬇️) Salsa Roja: 15 large guajillo peppers 4 large pasilla-ancho peppers 1/4 onion 1 tbsp oregano 3 tbsps salt 2 cups of pork broth NOTES: When you're cooking your pork make sure theirs always enough water in your pot, if at any point you feel like you need more water, then boil 1 liter at a time and add it. NEVER add cold water. Adjust salt once you add hominy!
