Don’t let the crunch fool you, the chicken was still tender inside :)) Ingredients: 2 boneless chicken thighs, cut into ½-inch chunks ½ tsp salt ½ tsp white pepper 1 tsp paprika 1 tsp garlic powder 1 tsp sesame oil Batter: ½ cup rice flour ¼ cup potato starch ½ tsp salt ½ cup water Sauce: 2 cloves garlic, minced 2 tbsp soy sauce 2 tbsp honey ¼ cup water 1 tsp cornstarch + 1 tbsp water (cornstarch slurry) Optional Garnish: sesame seeds, scallions Instructions: 1. Mix the chicken chunks with salt, white pepper, paprika, garlic powder, and sesame oil. Let sit for 15 minutes. 2. In a bowl, combine rice flour, potato starch, salt, and water. Mix until smooth, slightly thinner than pancake batter. 3. Dip the marinated chicken pieces into the batter until fully coated. 4. Heat oil to 350°F (175°C). Fry the chicken for 6-7 minutes until lightly golden. Drain and set aside. 5. Increase the oil temperature to 400°F (200°C) and fry the chicken again for 3 minutes until extra crispy. Drain on a wire rack. 6. In a pan, sauté minced garlic. Add soy sauce, honey, and water, bringing to a boil. Stir in the cornstarch slurry and cook until thickened. 7.
