Rotisserie chicken pho is still one of my favorite easy pho hacks. Ingredients: Rotisserie chicken 16 cups of water 1 onion 2 large piece of ginger Chicken Pho Soup Base or Chicken bouillon 6 pcs of star anise 2 tbsp rock sugar 2-3 tbsp fish sauce (optional and to taste) 1 bag of Bangkok Beef Meatballs (optional) 1 can quail eggs (optional) 2 bags of pho, rice noodles Condiments: Cilantro, green onions, white onions, lime, bean sprouts, hoisin sauce, sriracha, garlic oil and chili oil. Shred the chicken then use the bones for the soup. Slice the onion and ginger in lengthwise and pop this in the air fryer or use a pan to char it. This will give your soup a rich smoky flavor. Add water to a large soup pot, the chicken bones, onion, ginger, star anise, rock sugar, soup base and fish sauce. Taste and adjust accordingly. If using the soup base, add according to the instructions on the container for the water/soup base ratio. Cook this for about 30 minutes and occasionally skim off the fat/impurities. Before serving, remove the star anise and the seasoning pouch. Cook the pho according to package instructions. Serve with the condiments of your choice.
