Each bite bursts with rich, savoury flavours, leaving you wondering how something so simple could taste so incredible. And the best part? It’s so good, it doesn’t even need a sauce—just a squeeze of lemon and you're in festive heaven. 😋 Save this for your next cooking adventure 🏷️ Ingredients (serves 2 pax) - 2 chicken thighs (we used bone-in, skin on), any cut of chicken works -15ml olive oil -20ml Greek yogurt -1/2 Tsp paprika -1 /2 Tbsp Italian seasoning/dried oregano -Splash of chicken broth/water -Salt & pepper (to taste) Instructions Add the chicken to a bowl with the oil, yoghurt, salt, pepper, paprika, and Italian seasoning or oregano. Massage well. Let the chicken sit and marinate in the fridge for at least 1 hour or overnight. You can bake it right away but it will be so much more tender if you let it marinate for at least 1 hour. When the chicken has marinated, preheat the oven to 200℃. Remove from the fridge and transfer the chicken and juices to an oven-safe baking dish. Push the chicken to the side with a spoon, add some chicken broth or water and move the chicken around so that the juices are distributed evenly. Bake uncovered for 45 minutes to 1 hour, depending on the size of the thighs. To crisp up the skin further you can broil the chicken on top for 1 to 2 minutes but keep a very close eye on it. Scoop out the garlic cloves and separate the oil, the garlic-infused oil can be stored in the fridge for up to 5 days (it will solidify but turn back to liquid in room temp, you can use it in your pasta dishes) 4. In a small bowl, mix the softened butter, garlic cloves, parmesan cheese, parsley, salt and pepper (we like to add a little more minced garlic for added texture) 5. Lather the bread with the garlic butter spread and top it off with cheese of your choice 6.
