One-Pan Skillet Lasagna 🍝 Fall comfort food season is here and I couldn’t be more excited. Here’s how to make it: 2 tbsp olive oil (I use @Brightland rosemary) 1 cup yellow onion, diced 1/2 cup carrot, finely diced 1/2 cup celery, finely diced 8 cloves garlic, minced, to taste 2-3 tbsp tomato paste 1 lb ground beef or Italian sausage 3/4 cup red wine 24 oz @Rao’s Homemade Arrabiatta 1 - 1.5 cups @Kettle & Fire beef broth (start with 1 then add more as/if needed) 8 oz lasagna noodles, broken 1 tsp dried basil 1 tsp dried oregano 1 tsp dried thyme Salt and pepper to taste 1 tsp red pepper flakes (optional) 1 cup ricotta cheese 1 - 1.5 cups (4-6oz) freshly shredded mozzarella cheese, to taste 3/4 cup (~4oz) freshly grated Parmesan cheese Fresh basil or parsley for garnish (optional) 1. Heat olive oil over medium heat. Add in your onion, carrot, and celery followed by a pinch of salt and pepper, to taste. Saute for 4-5 minutes. 2. Add in your garlic and cook for another 30 seconds. 3. Clear a center in the middle of your pan and add in your tomato paste. Allow to cook off in the pan for 2-3 minutes before incorporating with the rest, then stir to combine. 4. Clear another center in the middle of your pan and add in your ground beef or Italian sausage. Season with salt and pepper (if using beef), break up with a wooden spoon, and cook until browned. 5. Pour in your wine, stir, and simmer for a couple minutes or until reduced by half. 6. Pour in your beef broth and pasta sauce. Season with salt and pepper and stir. Bring to a simmer. 7. Pour in your broken lasagna noodles and stir to combine with the sauce, making sure the noodles are covered as best as possible. 8. Reduce heat to low, cover and simmer for 15-20 minutes, or until the noodles are cooked through, stirring occasionally. Add the extra 1/2 cup broth if the sauce becomes too thick. 9. While your noodles are cooking, combine your ricotta, 1/4 cup parmesan cheese, salt, and pepper in a separate bowl. Set aside. Preheat your broiler. 10. Once your noodles are tender, turn the heat off and add in your ricotta cheese mixture. Stir until combined and creamy. 11. Sprinkle the shredded mozzarella and remaining 1/2 cup parmesan cheese over the top. Broil until golden and bubbly. 12. Remove from the broiler and let sit for 5 minutes to set. Garnish with fresh basil or parsley. 13. Serve with extra parmesan cheese and enjoy!
