Lasagna soup on this episode of Fall Soup Sundays! I love lasagna and soup, so this is the perfect combination 👩🏻🍳 This one is great for a crowd or if you need to feed a lot of people! Recipe (4-5 servings) -1/2 yellow onion, diced -2-3 cloves of garlic, minced -1/2 pound ground beef -1/2 pound italian sausage -1/4 cup tomato paste -1/4 cup red wine -1 can crushed tomatoes or tomato sauce -1 carton of beef broth -6-8 lasagna noodles, broken into pieces -salt to taste -pepper to taste -garlic powder to taste -italian seasoning to taste -1 teaspoon of brown sugar or honey -ricotta cheese -parmesan cheese 1. Add a drizzle of olive oil and a tablespoon of butter to a pot over medium heat. Add your onions and sauté until they begin to turn translucent. 2. Add your ground beef and italian sausage. Use a meat chopper or spatula to break the meat into small pieces as it’s cooked. 3. Once the meat is fully cooked, add your garlic and cook for 1-2 minutes. Add your salt, pepper, garlic powder, and italian seasonings. 4. Add the tomato paste and cook for 2-3 minutes or until it turns to a dark red color. Deglaze with your wine and cook for another 1-2 minutes. 5. Add the tomatoes and beef broth. Bring the soup up to a simmer and add your broken lasagna noodles in. Add your brown sugar/honey. 6. Cover the soup and let cook for 10-15 minutes or until the noodles are fully cooked. 7. Serve and top with a scoop of ricotta cheese and fresh parmesan cheese.
