Cooking Sauce • Cooking time: 10 min • Prep time: 10 min • Serving: 2 persons • Difficulty: Easy 2/5 • Calories: 1,433 Ingredients: • 200g Chicken Thighs (about 2 Small Thighs) • 1 Egg • 30g Plain Flour • 40g Breadcrumbs • 1 Red Pepper • 1 Green Pepper • 1 Courgette (Zucchini) • 100g Uncooked Rice (White Or Brown) • 50ml 2Saucy Sriracha Honey - All Purpose Sauce • Vegetable Oil • Salt • Pepper Cooking Instructions: • Boil Rice: Rinse the rice under cold water until the water runs clear. In a medium-sized saucepan, add 100g of rice and 200ml of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. • Prepare the Chicken: Slice the chicken thighs into cubes and season with salt and pepper. • Coating and Frying: In separate bowls, place flour, beaten egg, and breadcrumbs. Coat each chicken cube in flour, dip in beaten egg, then coat with breadcrumbs. • Frying the Chicken with Vegetables: Heat vegetable oil in a large frying pan or skillet over medium-high heat. Add the coated chicken cubes and cook until they are golden brown and almost cooked through, about 4-5 minutes per side. • Add Vegetables: While the chicken is frying, slice the red pepper, green pepper, and courgette (zucchini) into strips. Push the chicken to one side of the pan and add a little more oil if needed. Add the sliced peppers and courgette to the empty side of the pan. Sauté them until they start to caramelise and soften, about 3-4 minutes. • Combine with Sauce: During the last minute of cooking, pour the Sriracha Honey - All Purpose Sauce over the chicken and vegetables. Toss everything together to coat evenly. Let it cook for another 1-2 minutes until the chicken is fully cooked and the sauce is heated through. • Serve: Once everything is heated through and well combined, divide the Sriracha Honey Chicken Bites with rice between two plates and serve immediately.
