Day 64, 65 & 66 of culinary school!! 👩🏽🍳 - i’ve been so excited to finally show you the vlog of our chef commis exercises! even though I couldn’t actually film the cooking as we were on a tight time constraint, i definitely wanted to show what we ended up doing! so basically, you did the exercise 2 times. Once as a head chef and then the second as a commis or sous chef. we were being graded on creativity of recipes, ability to lead another chef, organization, the balance of the plate and things like that. it was pretty nerve wracking going in there as you had no idea what to expect and I personally had never directed anyone in a kitchen before. But it was actually SO much fun, i loved it. I was in the group with pork tenderloin so I made roasted pork tenderloin with brown butter sage potato purée, caramelized onions and apples, crispy chili kale and fried sage. It turned out really good and i was really proud of the finished product! I’ve learnt so much in school so far and felt today was really an application of those skills.
