Delicious easy Mexican chicken salad! For the meat I used pre-cooked Del Real shredded chicken to show you guys a great option if you don't have any pre-cooked chicken breast handy! You can always cook your chicken breast if you want, but if youâre looking for a great pre-cooked option give this one a try! All heating instructions are on the package! For the veggies, cut up your potatoes into cubes and boil them till theyâre soft. You want to be able to poke a fork through them, but don't over it cause they will turn into mash when you mix them in your salad! Season them with some garlic powder, onion powder, salt, and pepper. For the jalapenos, I just dumped a small can of sliced jalapeno juice. You can dice them up into smaller pieces if you want, but I like the size of them straight out of the can! For the frozen veggie mix, it's pretty straightforward forward heat them however you like and dump them in! For the tostadas, I sprayed some zero-calorie cooking spray on some low-carb corn tortillas and air-fried them till they got crispy! This is quick and takes about 2-3 minutes per side at 400 degrees!
