Leftover Roast Lamb Ragu I serve mine over fettuccine! Ingredients Leftover lamb diced up (I had approx 2 cups) 1 brown onion diced 1 heaped tbspn minced garlic 2 carrots diced 3 sticks celery diced 1 cup mushrooms sliced 1 heaped tbspn tomato paste 3/4 cup red wine 1 cup beef stock 1 400g can diced tomatoes 2 tbspn mixed herbs 1 bay leaf 2 pinches brown sugar 1/4 cup Parmesan cheese Salt & pepper to taste Parmesan & parsley to garnish Method: Prep & dice all of your veg & lamb In a high sided pan add oil & onion Add in your garlic & cook for 1-2 mins Add in celery & carrot, simmer for 3-4 mins Add in tomato paste and stir through Pour in red wine & beef stock, stir through Add in mushrooms Allow to simmer on low heat for 25 mins Stir in diced tomatoes & mixed herbs Add in brown sugar & bay leaf Allow to simmer for another 15-20 mins Cook your pasta Add in Parmesan cheese & taste test Add salt & pepper as required Serve over pasta & garnish! #LambRagu #Leftovers #Dinner #DinnerIdeas #RoastLamb
