We are here for @minus18youth so make sure you keep voting to keep me all the way until the end ❤️ 1 tbsp EVOO 1.5 cups halved zucchini finely sliced 4-7 sprigs of thyme 4-14 cloves of garlic finely chopped Salt flakes Half a packet of spaghetti cooked to 1 minute less than packet instructions Small handful of finely chopped basil ½ cup grated parmigiano reggiano ½ cup pecorino romano 2 eggs and 3 yolks ½ tsp ground black pepper in a large deep pan add oil and zucchini on high heat and cook stirring for 2-3 minutes. Add thyme and garlic and cook for further minute Add salt and cook for 1 minute Cook pasta in well salted water Add basil to the zucchini. Add the pasta into saving the pasta water. In a jug combine cheese, eggs, pepper and ½ cup of pasta water well. Take the pan of pasta off the stove and pour in egg picture and begin to mix well for 2 minutes.
