The texture is SO good, full recipe below Make the filling: shred 1 carrot, 1/2 a small white cabbage, 1 pepper and crumble 1/2 block of firm tofu into a pan with some or seasame seed oil and 1 tbsp of soy sauce and cook until most of the moisture has gone. Leave to cool. Take your rice paper sheet and dip in water for 15-20 seconds to rehydrate, lay out and fill and roll with some of your filling. Repeat with a second sheet. Sprinkle with sesame seeds and fry in a neutral oil until golden and crispy on both sides.
