What you need:(Chicken) 6-8 Chicken Thighs or 4 Breasts 1 Tsp Minced Garlic 1 Tsp Minced Ginger 1 Tbsp Oyster Sauce 1 Tbsp Soy Sauce S&P Olive Oil Sauce 1 Tbsp Minced Garlic 1 Tbsp Minced Ginger 2 Tbsp Curry Paste(I used yellow) 250ml Chicken Stock 400g Coconut Milk 1-2 Heads Pok Choi To Serve Rice Lime Coriander Chilli Crisp What to do: In a large bowl add chicken and marinade ingredients, season well and marinate for at least 30 mins if you can. Cook on both sides until cooked through. While your chicken is cooking in another pan add olive oil, garlic & ginger, cook for 1-2 mins. Stir in curry paste and cook for 1-2 mins. Pour in stock & coconut milk, season well. Add in Pok Choi, cover and simmer for 7-10 mins.
