Crack the eggs and separate the yolks from the whites in a small bowl. 2. Add lemon juice, salt & cayenne to yolks. 3. Melt the butter in a microwave or on the stovetop until it’s completely liquid. 4. Whisk the egg yolks till everything is combined and begins to thicken. 5. Transfer all of yolk to a mason jar. 6. Once the butter is melted, slowly pour it into the mason jar containing the egg yolk mixture while using the immersion blender on low speed. Continue blending and pouring until all the butter is incorporated and the sauce is smooth and creamy. 7.
