Tomato & Garlic Ricotta Pasta inspired by @Magda | Good Food Discoveries . Simple mid week meal, just needs a little grilled shrimp to finish it off next time. Recipe -2lbs Ripe Tomatoes off the Vine -Head of Garlic -Olive Oil 3-4 T -S&P to Taste -16 oz Pasta of Choice -Pasta Water -Red Chile Flakes to taste -1 C Ricotta Cheese -Fresh Basil 4-5 leaves -Fresh Grated Parmesan **Set oven at 400 degrees on Roast. **Half Tomatoes, cut top off Garlic, drizzle with Olive Oil, Salt and Pepper **Oven for 20 minutes, cover with foil for another 10-20 minutes **Cook Pasta when you take out tomatoes **Add tomatoes, garlic to blender and add Ricotta, Basil, Red Pepper Flakes….blend. Add pasta water if needed for consistency desired **Add mix to pan/pot on medium heat, add pasta **Bring together for a few minutes, add pasta water as needed **Serve, top with Parm and Basil **We will do this again with grilled shrimp **Enjoy #pasta #tomatoes #italian #italianfood #petermillar #petermillargolf #graza #fyp #3piecesofpecan
