Vietnamese Ginger Chicken (Gà Kho Gừng) Chicken marinade - 1 whole chicken cut up or 1 kg chicken thighs - 1 tbsp chicken powder - 1 tsp sugar - 1/4 tsp MSG - 1 big piece of ginger - 1 tbsp minced shallot - 1 tbsp minced garlic - 3 tbsp fish sauce - 250ml coconut water Caramel sugar - 1 tbsp vegetable oil - 2 tbsp sugar Garnish - ground black pepper - Red chilli (optional) Instructions 1. Cut up whole chicken or chicken thighs into smaller pieces 2. All chicken into a bowl along with all the marinade ingredients and let it marinate for at least 30 mins. 3. In a pot at oil and sugar on medium heat. Let the sugar melts and caramelizes to an amber colour. 4. Add the chicken and toss in the caramel sauce. 5. Add the coconut water, cover and let it simmer on low for 30 mins. 6.
