When I’m low on time & trying to squeeze meal prep in, the key is taking as many shortcuts as possible on the steps that would typically take a long time. In this recipe, I use Bush’s Chili Magic Campfire Style starter to quickly get that chipotle smoky flavor of chili that’s been cooking for hours without spending hours in the kitchen. The Chili starter already comes with all spices and chili beans, so all I gotta add is the protein and the tomatoes. What You Need 1 lb ground Chicken 1/2 cup chopped squash 1/2 cup frozen corn 1 can diced tomatoes 1 can Bush’s Chili Magic Campfire Style Starter Bell Peppers, cut in half Sprinkle of Cheese How to Make It On a baking sheet, place the red pepper halves face down and bake at 400F for 10 minutes to soften the peppers. To a saucepan, add in your meat and saute until it’s cooked through. I also like to add in some extra veggies for the fiber. Like squash and corn. Once everything is softened, add in the can of diced tomatoes and the chili starter. Bring it to a boil and then simmer for 10 minutes with the lid closed. Scoop the chili into the cavities of the pepper and top with some cheese. Place them in trays and then store them in your fridge or freeze.
