A new series where l'll be showing you really simple, quick and tasty meals that add extra nutrients into your diet, such as this veggie packed pasta sauce Recipe Wash/peel and chop 2 bell peppers, 3 tomatoes and 3 carrots and add to a pan with extra virgin olive oil, a pinch of salt, some dried parsley and a big splash of water. Cover and cook for 15 mins. Meanwhile cook your pasta. When the carrots are tender blend the veggies and add back into the pan with a tin of chopped tomatoes and a jar of chickpeas.
