One Pot Lemon Pasta 🍋 This One Pot Lemon Pasta is one of my favourite comfort dishes. It’s so creamy and delicious, it’s hard to believe it’s totally #vegan. Instead of using cheese or cream to achieve that perfectly creamy texture I used coconut milk for a silky sauce that is packed full of flavour and nutrition. Serve with a big green salad to add even more flavour and plant goodness into this dish. 📲 Don’t forget to save this recipe to make later INGREDIENTS (serves 1 as a large meal and 2 as a smaller meal) • 1 x onion • 4 garlic cloves, chopped • 1x 400g tin coconut milk • 1 cup (120g) brown rice pasta • 240 ml boiling water • 1 lemon, juiced and zested • 2 tbsp extra virgin olive oil • ½ tsp chilli flakes • Salt and pepper METHOD 1. Place a pan on a medium heat and sauté the onions until translucent, about 5 minutes. 2. Add the garlic to the pan and cook for 1 minute 3. And the remaining ingredients and cook on a medium heat for 15 minutes, stirring occasionally 4.
