Butter Chickpea and Spinach Curry 🍛 A vegan take on Indian Butter Chicken. This Butter Chickpea and Spinach Curry is a fragrant stew spiced with turmeric, garam masala and fresh ginger, and is rich and creamy from the coconut milk. This curry is great for using over any leftover veg and you could even add in cubed tofu for an extra textural contrast, or serve as it is, over brown rice or with wholemeal pita, to catch every last drop of the tasty sauce. You won’t want to leave a bit behind. If you like this recipe don’t forget to hit SAVE so you can come back to it later INGREDEINTS (serves 2) • 1 tbsp coconut oil • 1 red onion sliced • 1 x 400g can chickpeas, rinsed and drained • 1 red pepper, sliced • 100g green beans, chopped into mouth sized pieces • 4 garlic cloves • 2 tbsp tomato puree • 1/2 tbsp turmeric • 1 tbsp ground cumin • 1/2 tbsp garam masala • 1/2 tbsp ground ginger or 1-inch fresh ginger, grated • 1 x can coconut milk • 100g of fresh spinach or 4 frozen spinach cubes • Brown rice to serve TOPPINGS • Coriander • Yogurt • Fresh chillies METHOD 1. Pop the coconut oil to a large frying pan and fry the spices and ¾ of the onion for 5 minutes then add the chickpeas, red pepper and green beans to the pan and cook for 1 minute making sure they are evenly coated in the spices. 2. Then add in the coconut milk, tomato puree and water and simmer for 20 minutes. Add in the spinach and stir until wilted. 3.
