Lemon roasted fennel with crusted salmon 🍋 Recipe 3 fennels 2 salmon fillets 1/4 cup breadcrumbs 1/4 cup parmesan cheese 1 lemon juice extra virgin olive oil Salt and pepper Dill and parsley Quarter the fennels. Toss with olive oil, salt, pepper and lemon zest. Bake in oven at 180°C (350°F) for 30 min (cover with foil after 15 min to avoid blackening). In a bowl, combine 1/4 cup breadcrumbs, 1/4 cup Parmesan cheese, salt and pepper. Add a drizzle of olive oil. Place salmon fillets in a baking dish. Cover with breadcrumb mixture. Bake in the oven at 180°C for 15 minutes and under the broiler for 5 minutes to get a golden crust.
