Posting this just for the zucchini recipe. It was so good. Fml I reckon I’m gonna try it as it’s own pasta dish maybe toss through some orecchiette or something. 100g finely diced guanciale, speck or even bacon. 4 small zucchini cut into random pieces. A few cloves of finely chopped garlic 1 long red chili sliced Salt to taste Handful of chopped hazelnuts Basil right at the end Cook the guanciale in a large fry pan until just browned (can add some oil if you want) High heat add zucchini and cook until slight caramelised about 3-4 minutes on each side. Add garlic and chili for 1 minute stirring Season and finish with hazelnuts. Top with basil before serving. Effing bomb. I share my cheats quick spaghetti bolognese another day.
