🤤 Katsu Curry inside a burger = genius👇 INGREDIENTS 🔪 o 1x 280g pack of extra-firm tofu o 100g plain flour o 100g panko breadcrumbs o 50ml oat milk o 1tbsp garlic granules o 4tbsp vegetable oil o 4x vegan brioche buns o 4tbsp vegan mayo o 2tbsp curry sauce (homemade best) o 1x lime o 2x carrots o Handful of coriander o Handful of pickled veg o Salt o Pepper METHOD 👨🏻🍳 1. Cut the tofu block into four even slices. 2. Pour the flour into a shallow bowl, then season with garlic granules, salt & pepper. 3. Pour the oat milk & panko breadcrumbs into separate bowls. 4. Dip the tofu into the flour, then the milk, then the panko, making sure to get a good coating of each layer. 5. Make the curried mayo by mixing the mayo, 2tbsp of curry sauce & a squeeze of lime juice. 6. Peel the carrots into ribbons, and quick pickle your veg (or use pre- pickled). 7. Heat the vegetable oil in a frying pan. Once shimmering, carefully add the tofu & fry on a medium-high heat until golden brown & crisp on each side (around 5 mins each side). 8. In a separate pan, toast the brioche buns until golden. 9.
