Back from Vietnam and I had to make one of my fave foods from the streets of Vietnam, bánh tráng nướng or Vietnamese Pizza…Quesadilla. This is a great late night eat or a quick snack. The rice paper and egg serve as the crust and dough of the pizza. I top it off with some sliced green onion and @spambrand plus cheese, mayo and hot sauce. It comes out crispy, cheesy and spicy! Ingredients Rice paper (I always use Three Ladies Brand) Sliced green onion Chili oil Fried SPAM (or any small form sausage) Shredded mozzarella cheese Pineapple Kewpie mayo Sriracha Cilantro and Thai chili for garnish 1. Heat a pan over medium heat and add rice paper directly to pan. 2. Immediately crack an egg over the rice paper. Break the yolk and swirl the egg around the rice paper to the edges. 3. Add some chili oil to the egg and swirl around. Top with green onion. 4. Add SPAM, pineapple and cheese. Drizzle mayo and sriracha. Fold pizza over and flip till egg is cooked through, cheese is melted and rice paper is crunchy. Eat and enjoy! #ricepaperpizza #foodtiktok #banhtrangnuong #pizza

Vietnamese sandwiches are filled with an intoxicating blend of delicious Vietnamese deli meats, homemade mayo, creamy pâté and a mixture of fresh herbs and pickled vegetables all packed into a deliciously fresh baguette. The baguette’s baked in Vietnam are lighter and airier than what you’ll find in the US and it’s a testament to the importance of fresh ingredients. I’ve been obsessed with enoki mushrooms and these enoki beef rolls are so fun and easy to make. I always keep some thinly sliced hotpot meat in the freezer for quick and easy meals and to make this you just need a pack a enoki mushrooms for a flavor dish! Ingredients 1 lb thin sliced beef 1-2 tbsp cooking oil 1 onion sliced 2-3 cloves garlic chopped 1 pack enoki mushrooms trimmed and separated into tiny bundles Sliced green onions Sesame seeds 3 eggs beaten For sauce: 1/4 cup soy sauce 1/4 cup water 2 tbsp honey 1-2 tbsp dark soy sauce Ground black pepper 1. Wrap thinly sliced beef around small bouquets of enoki and set aside. Whisk together sauce ingredients. 2. In a pan sauté onion in oil until softened 3-5 minutes. Add garlic and sauté another 30 seconds. Using onions and garlic as a bed, stack enoki beef rolls in pan. Drizzle sauce and bring to a boil. Once boiling, cover reduce heat to low and cook 3-5 minutes. 3. Uncover and add eggs. Cover and cook another 3-5 minutes. Garnish with green onions and sesame seeds.
